Bending closer to sniff it, you smell a homely earth smell--a freshness that makes your mouth water. Reaching for your fork and knife, you carefully cut into the chile relleno. Sizzling juices greet your ears as melted cheddar cheese pours out like a busted dam. Piercing a chunk of cheese with your fork, you chew thoughtfully, marveling on the taste of gooey, stringy cheese as you gulp it down.
